Sweet Potato Chronicles — Muffins

Grated carrot and apple makes our Morning Glory muffins super moist, and it also gets some fruit and vegetables into our kids. Mix those together and set them aside. Then you’re gonna mix togeather all your dry ingredients including your raisins and nuts. Mixing those into the dry will stops them from sinking to the bottom of your muffins.

Now we’re going to whisk together our wet ingredients. Then you’re just going to combine all three bowls together, mixing just until combined. The secret to tender muffins is not overmixing.

Scoop the batter into a muffin tin. If you use a great non-stick pan, you don’t even need liners. Bake for 20 minutes until a toothpick comes out clean.
