Freezable Meals – Mini Turkey Meatloaves

Laura: Here’s a great meal idea that you could have in your freezer, to help save you time on busy weeknights.
Ceri: Freezing things in smaller portions works really well for me. It’s why I like to have mini turkey meatloaves stashed in my freezer. They’re so easy to make and one is the perfect portion for a younger child. Adults and bigger kids probably want two.
I’ve Cook some onion, celery and carrot in olive oil on the stovetop for a just a few minutes. Then I let it cool before mixing it with some ground turkey, rolled oats, ketchup, parmesan and an egg to hold it all together.
Scoop the mixture and get into a mini loaf pan. Make a glaze out of ketchup and a little bit of Worcestershire sauce and spread that on top.
Cook these in the oven for about 40 minutes. Once they’re done, they’re ready to freeze. After an hour or so, take them out and pop them into a freezer safe container.
When you’re ready to eat them, you can put them right from the freezer into the oven. A steam convection toaster oven will do the trick easily and quickly.
