Sweet Potato Chronicles — Food for active kids

Ceri: Hi, I’m Ceri Marsh.

Ceri: A great protein-packed pantry staple that can be used in a lot of different ways is the humble, affordable can of black beans. If you’ve only been using these in chili, you’re missing out.

I like to combine them with cubed, roasted butternut squash. I just sprinkle on some cheese onto the tortillas and sandwich it together. Using a grill with two cooking sides means you avoid that tricky flipping over of the quesadilla.

When they’re done, you’re gonna quarter your quesadilla and serve with guacamole, salsa and sour cream. Your kids are gonna be happy, fuelled up and full of energy.
