Laura: My go-to energy boosting recipe are pancakes that pack a secret weapon. With high protein cottage cheese mixed right into the batter along with all the standard pancake ingredients and a little cinnamon for sweetness, your kids will never know that they’re eating something “healthy.” I like to make a double batch of my pancakes on the weekend, so I have extra for snacks during the week. I prefer to make them on a griddle, because they cook up so perfectly and if the griddle plates can be removed and go right into the dishwasher— even better!
Top your pancakes with a little Greek yogurt and a drizzle of honey and your kids will be powered up, ready for anything.
